Baby Cereal Pancakes


I skipped the rice cereal with Kayden but had already bought a can so I didn’t want it to go to waste and tried this recipe. They turned out really good, and she loved these. Kayden was a late eater (11 months) and started real solids (skipped purees) I can not even begin to describe how easy and wonderful this has been (baby led solids) for our family. 


Ingredients:

1 cup whole wheat flour
1/2 cup baby barley cereal (or other baby cereal)
1 cup breast milk (or another liquid such as milk or formula)
1/2 cup mashed banana (or fruit of your choice)
1 tbsp melted margarine or butter (unsalted type)
3 egg yolks
1/2 cup baby oatmeal
unsweetened apple juice (about 1/2 cup) Use water if you prefer 

Add cinnamon, nutmeg, dash of vanilla or other flavorings if you wish.

Directions:

Mix all ingredients together and add enough juice to make pancake consistency. Cook on cook top in frying pan as with “regular” pancakes.

I almost always have pancakes in my diaper bag! Now I add purees like sweet potato or squash to them for some extra nutrition. These freeze well, so you can make a batch and have some on hand for a few days.
